Can someone please explain the difference between Quatrz(a) and Quartz(am).

Not sure where you are getting those names. You can have various crystallinity and hydration of SiO2 phases reflected in the equilibrium constants for quartz, chalcedony, SiO2(a), SiO2(am), SiO2(am-gel), etc. The larger the log K, the less crystalline.
